Elgin was officially designated the 'Sausage Capital of Texas' by the Texas Legislature in 1995, thanks to a century-plus tradition of smoked sausage making led by Southside Market and Meyer's Elgin Smokehouse.
What makes it special
Elgin's sausage story starts in 1882 when William J. Moon opened a meat market on the town's main street that would eventually become Southside Market & Barbeque — one of the oldest continuously operating barbecue joints in Texas. Southside's all-beef 'Elgin Hot Guts' sausage became the signature product of the town, and the recipe (and reputation) has stayed remarkably consistent for more than 140 years.
Meyer's Elgin Smokehouse, founded in 1949, joined Southside as the second major Elgin sausage producer. Meyer's ships sausage nationwide today and has a busy onsite barbecue and retail operation off US-290.
The Texas Legislature made Elgin's 'Sausage Capital' status official in 1995 with a House Concurrent Resolution — meaning the title isn't just marketing, it's actual state law. There's an annual Elgin Hogeye Festival every October to celebrate, complete with sausage competitions and live music.
